Margaritas

  • 1/4 cup simple syrup*
  • 2 TBSP fresh squeezed lime juice
  • 2 TBSP fresh squeezed lemon juice
  • 2 TBSP fresh squeezed orange juice
  • 2 TBSP fresh squeezed grapefruit juice
  • pinch of salt
  • ice
  • fresh fruit for garnish

Salt the rim of your glass by rubbing with a lime wedge then dipping kosher salt. Combine syrup, juices, and pinch of salt a in pitcher with ice, stir well. Pour into prepared glass and garnish with a lime wedge. To serve frozen, combine the ingredients in a blender with ¾ cup ice and blend until smooth. Pour into prepared glass and garnish with a lime wedge. If you wish to add tequila you can do so when you combine the juices.

Chef’s note: To make simple syrup:  combine equal parts of sugar and water in a small saucepan.  Heat over medium heat, stirring occasionally, until sugar is completely dissolved.  Cool and store in refrigerator.

Queso Dip           

  • ½ cup butter
  • ½ cup flour
  • ½ tsp cumin
  • 1 tsp KitchenAble Seasoning
  • 4 cups whole milk
  • 1 10 oz can of Diced tomatoes and Green Chilies (Rotel)
  • 3 cups grated mozzarella cheese
  • 2 cups grated cheddar/Colby Jack cheese
  • 1 cup milk

In a large saucepan melt the butter over medium heat.  Whisk in the flour and spices and continue cooking over medium heat for about 1-2 minutes, or until the roux is fragrant.  While whisking, pour in the milk and stir constantly while cooking over medium-low heat until the mixture thickens and coats the back of a spoon well.  Stir in the cheeses, allow to melt completely.  Add some of the remaining milk to reach the desired consistency. Add can of diced tomatoes and green chilies.  Yield 7 cups of cheese dip 

Chef’s note: When serving, toast corn chips in 350°F until fragrant, about 5-10 minutes.
