Cinco de Mayo Recipes

Margaritas

  • 1/4 cup simple syrup*
  • 2 TBSP fresh squeezed lime juice
  • 2 TBSP fresh squeezed lemon juice
  • 2 TBSP fresh squeezed orange juice
  • 2 TBSP fresh squeezed grapefruit juice
  • pinch of salt
  • ice
  • fresh fruit for garnish

Salt the rim of your glass by rubbing with a lime wedge then dipping kosher salt. Combine syrup, juices, and pinch of salt a in pitcher with ice, stir well. Pour into prepared glass and garnish with a lime wedge. To serve frozen, combine the ingredients in a blender with ¾ cup ice and blend until smooth. Pour into prepared glass and garnish with a lime wedge. If you wish to add tequila you can do so when you combine the juices.

Chef’s note: To make simple syrup:  combine equal parts of sugar and water in a small saucepan.  Heat over medium heat, stirring occasionally, until sugar is completely dissolved.  Cool and store in refrigerator.

Queso Dip           

  • ½ cup butter
  • ½ cup flour
  • ½ tsp cumin
  • 1 tsp KitchenAble Seasoning
  • 4 cups whole milk
  • 1 10 oz can of Diced tomatoes and Green Chilies (Rotel)
  • 3 cups grated mozzarella cheese
  • 2 cups grated cheddar/Colby Jack cheese
  • 1 cup milk

In a large saucepan melt the butter over medium heat.  Whisk in the flour and spices and continue cooking over medium heat for about 1-2 minutes, or until the roux is fragrant.  While whisking, pour in the milk and stir constantly while cooking over medium-low heat until the mixture thickens and coats the back of a spoon well.  Stir in the cheeses, allow to melt completely.  Add some of the remaining milk to reach the desired consistency. Add can of diced tomatoes and green chilies.  Yield 7 cups of cheese dip 

Chef’s note: When serving, toast corn chips in 350°F until fragrant, about 5-10 minutes.

Like you, we have been blindsided by the events over the last two weeks. We are adapting to the new regulations and quarantine lifestyle. We hope that “normal” soon returns.

In our efforts to maintain some business while serving out loyal clients we are now offering a limited menu of takeout food daily. We will post our menu weekly and you can order and pay through our website. Menu items will be ready for pickup between 4 and 6 pm at KitchenAble. Please come to our back door (we have a sign designating where to park) and call- we will run the food out to you.

Register NOW for Summer Camp 2020!

We have changed our summer camp plans for 2020 to better fit the unique circumstances we are currently experiencing.  Our class sizes will be very limited.

A broad range of topics will be taught that include:  kitchen safety, basic kitchen skills, basic knife skills, menu planning, nutrition, baking basics, how to understand (and follow) a recipe, and proper dish washing technique.

During most of our time in the kitchen we will teach through demonstration though the participants will take turns as helpers for “hands-on” experience. Each week has a limited number of participants.  Payment and necessary paperwork are due by June 1st.  Participants will receive an apron, a recipe packet, and certificate of completion at the end of the week.  Book your spot here.

Participants 7 years or older are welcome and must conduct themselves appropriately during participation.  In addition to fun with food we will discuss health and nutrition.  Please be aware that children who attend this program are expected to taste at least one small bite of all we prepare unless they have a food allergy. (Parents, thank you for supporting this policy.)

Please note that this is a group learning environment and that although we do have a hands-on activity scheduled each day the majority of class time will be demonstration  as participants take turns in their role of kitchen helper.  If your chef needs more supervision or has difficulty with patience you may prefer to book a private lesson for them.  You can email us for further details.

We are thrilled to celebrate 5 years of sharing our kitchen and many happy memories with the Tallahassee community. Please join us this Thursday- April 11, for a treat at our cottage, we’ll have plenty of birthday cake to share! (Conveniently it is Jessica’s birthday too.) Food Truck Thursday will be going on at this time so you can enjoy your night at Lake Ella and plan to purchase dinner from one of the food trucks, they will also have live music on their stage.

The weather is fabulous and we are thrilled to join our local farmers and producers at the Tallahassee Farmer’s Market, 1415 Timberlane Rd (In Market Square). Saturday; May 4, at 9:30am. (YES, they are still open!)

Join us at the Tallahassee Farmers Market for a fresh and free demonstration of seasonal, local produce. Chef Jessica from KitchenAble will be preparing and sharing samples of “fresh picks”.

Items demonstrated will be available for purchase from the farmers at market but quantities are limited so come early and shop from the week’s harvest. Market is open 8am-Noon.

Sweet Potato Biscuits- These sumptuous Southern treats are made using fresh sweet potatoes, Greek yogurt, and a little cinnamon.  They will be baked fresh on Wednesday afternoon and can be refrigerated or frozen.  Price is $18 for 12, 3″ biscuits.

Skillet Cornbread

Skillet Cornmeal- Jessica has had more marriage proposals than she can count for this dish.  Locally ground Bumpy Road Cornmeal is baked in a cast iron skillet to achieve buttery, golden perfection.  A 9″ round is $18.

Cranberry Apple Pie-  Our famous, all-butter pâte brisée crust is woven over a tasty combination of fresh apples, fresh cranberries, and citrus zest.  Price of $30 is for a 9″, deep-dish pie.

Butterscotch Pumpkin Pie

Butter-scotch Pumpkin Pie-  Drambuie,(the famous liquor made with Scotch whiskey, honey, herbs, and spices), elevates the flavor of this seasonal classic beyond what you can imagine.  Tucked into our all-butter crust the creamy pumpkin filling is luscious.  Price of $28.00 is for a 9″ deep-dish pie.
